It’s been pretty busy around here lately, but there’s always time for a good breakfast!  We actually had this for “brinner” the other night.  I just love me a good breakfast burrito in the evening :-)

First you saute the onions in a bit of olive oil over medium heat.  Once they start to turn translucent, add in the egg (which should be beaten really well in a separate bowl and about 1 Tbsp milk added to it to add fluffiness and creaminess).  Once the egg is scrambled and cooked, add in the cooked and sliced turkey sausage links.  You can also add the cheese to the pan at this point, but I prefer not to because it gets rather ooey gooey in the pan and is harder to clean afterwards.

This is what you should have afterwards.  Feel free to add in some chopped red pepper or whatever other ingredients you’d like.  That’s what’s great about this recipe…you can make it your own.

I prefer to buy the uncooked, whole wheat tortilla shells because they are fresher and taste so much better.  I buy mine at Costco, but you can also get them at the grocery store.  They are generally located in the fridge section by the cream cheese and yogurts.  They are super easy to prepare.  Just put on in the pan for 30 seconds to 1 min and then flip it and cook for another 30 seconds.  And then – Voila! – it’s done :)

We like to top ours off with some good ol’ salsa or picante sauce.  You could also do hot sauce or freshly chopped tomatoes.

This is the final product.  You then roll it up like a burrito and enjoy!  These are super simple, nutritious and protein-packed.  Great for an energy boost in the morning or for dinner in the evening.  What’s nice is that they can also be made in advance and frozen for future use.  In fact, I made about 5 of these and had all intentions of freezing them (leave out the salsa/tomatoes if you plan to do this, otherwise they will be soggy), but they smelled so good that we all inhaled them immediately.  Oh well, I had good intentions :-)  Hope you enjoy your weekend!

Breakfast Burritos

  • 1 Tbsp olive oil
  • 1 egg
  • chopped onion, red pepper
  • 2 turkey sausage links
  • 1 oz chopped or shredded cheese
  • 1 whole wheat tortilla
  • salsa, hot sauce or fresh tomato

Saute the onion (red pepper too, if you’re using) in 1 Tbsp olive oil until translucent in color.    In a separate bowl, beat the egg and 1 Tbsp milk for 2 min.  Then add this to the pan and scramble.  Once the egg is cooked, toss in the turkey links (which have been heated and sliced).  Remove this from the pan and put on a plate.  Top with cheese.  If you’re using an uncooked tortilla shell, cook it (using the same pan) for 30 seconds to 1 min and then flip to the other side and cook for 30 seconds.  (You will know when it’s ready to be flipped because it will start to form bubbles and rise.)  Remove the tortilla and top with the filling and add salsa.  If you’re using a precooked tortilla, just heat in the microwave for about 30 seconds, top with filling and roll up like a burrito.  It’s always best to have the tortilla warm because it makes it super easy to roll it up.  Enjoy!
